WE BUY DIRECTLY FROM OUR PRODUCERS. Which doesn’t simplify our logistics. We work with more than 150 producers in Italy, from whom we source directly all our produce, no intermediaries. In order to do so, we’ve set-up a grouped transport trail in Milan for our produce in the North and in Napoli for the South. And for certain ultra fresh produce such as the mozzarella di bufala, we have trucks coming directly from the caseificio to the restaurant. This allows us to buy much cheaper and work with small craftsmen. To give you an example, we buy our culatello from our producer in San Daniele (Lorenzo Bagatto), who makes 2’500 hams per year !
